Now I am living in the UK, a lot of my friends like dumplings. They often ask me for the recipe. I try to point out; the filling is random, the pastry making is not explainable. They think I must want to keep some secret recipe. No, it just needs years and years of practice. In China, every household has a different way to make dumplings. Hence the dishes are so diverse and delicious in different ways; texture, taste, and how you cook them (steam, boil or fry). Being invited to join a Chinese family dumplings meal, is the sign of being very close.
